
Zucchini Mushroom Chicken Stir Fry
A quick and delicious copycat Panda Express recipe that combines cubed chicken breast, zucchini, and mushrooms in a savory soy sauce mixture. Ready in just 20 minutes, this healthy stir fry is perfect for a weeknight dinner.
What you need

sesame oil

tbsp cornstarch

tbsp soy sauce

zucchini

tsp sugar
tbsp fresh ginger

tbsp rice vinegar
clove garlic

lb chicken breast
Instructions
1: Place cubed chicken in a bowl and toss with cornstarch. 2: Heat a cast iron skillet and add 2 tablespoons of sesame oil on medium-high heat. 3: Add chicken to the skillet and cook until browned for about 6 to 7 minutes. Remove chicken and set aside. 4: Lower the heat and add a drizzle of sesame oil, then add ginger and garlic; cook for 30 seconds. 5: Increase heat to medium, add zucchini and mushrooms, and cook until fork tender. 6: While the veggies are cooking, combine soy sauce, rice vinegar, and sugar in a bowl and whisk together. 7: Once veggies are fork tender, add the chicken back in along with the soy sauce mixture. 8: Cook for another minute, then drizzle with sesame oil and garnish with sesame seeds. 9: Serve over rice if desired.View original recipe
