
High Protein Cottage Cheese Mac & Cheese

What you need

tsp onion powder

tbsp butter
tbsp cornstarch

cup milk

cup cottage cheese

tsp garlic powder

tsp paprika
Instructions
1: Boil water and once boiling, salt it generously. Cook pasta until al dente. Before draining, reserve 1 cup of salted pasta water. Drain and set aside. 2: In a blender or with an immersion blender, blend cottage cheese, mozzarella cheese, garlic powder, onion powder, paprika, and salt. Blend until creamy and smooth. 3: In a large skillet over medium-low heat, melt butter. Once it's melted, transfer blended cheese sauce to the skillet and cook for about 5 minutes. Sauce should bubble and thicken some. 4: Add cooked pasta and parmigiano cheese. Add 1/4 cup pasta water at a time, if a more 'saucey' consistency is desired.
