What you need

tbsp olive oil
clove garlic

oz tomato sauce

slice sourdough bread

basil leaves

cup parmesan cheese

tbsp butter

kosher salt

slice sharp cheddar

black pepper
slice provolone

white onion
slice gouda
Instructions
1: In a pot, heat olive oil over medium heat. Add onions, carrots, and celery. Cook until just softened (about 5 minutes). 2: Add tomato purée, garlic, broth, basil, salt, and pepper. Bring to boil. 3: Reduce heat to a simmer and cook until carrots and celery are tender (about 15-20 minutes). 4: Place soup in a blender and blend until desired consistency. Serve warm. 5: Melt 1 tbsp butter in a skillet over medium heat. 6: Place two bread slices, buttered side down, on skillet. Place 2 slices of each cheese on the bread slices. Top with the remaining slices of buttered bread. 7: As the bottom side of the sandwich turns golden brown and cheese begins to melt, flip the sandwiches and cook until the next side is golden brown and cheese is completely melted and gooey. 8: Serve warm with your bowl of soup.View original recipe
