
Tini's Mac & Cheese
A delicious and creamy Mac & cheese recipe featuring cavatappi pasta and a blend of cheeses, making it the ultimate Thanksgiving side dish! This dish combines mozzarella, Colby jack, and cheddar cheeses with spices and a rich cream sauce, then baked to perfection for a golden top.
What you need

tbsp butter

tsp pepper

tbsp dijon mustard

lb mozzarella cheese

tbsp flour

lb cavatappi pasta

tsp garlic powder

oz evaporated milk

cup heavy cream

tsp paprika
Instructions
1: Preheat oven to 350 degrees and prepare a 9x13 baking dish. 2: Cook pasta until al dente (1-2 minutes less than what packaging says). 3: Grate all cheese and combine into a bowl. Reserve half of the cheese in a separate bowl. 4: Combine all spices together in a small bowl and divide half of the spice blend into a separate bowl. 5: Melt butter in a large, deep pan on medium heat. Add flour and reserved spice blend. Cook for 1-2 minutes. 6: Add evaporated milk into the roux and whisk until smooth. Slowly add in heavy cream, remaining spice blend, and Dijon mustard. Cook & thicken for 2-3 minutes. 7: Add in half the cheese, handful by handful, until the cheese melts. 8: Fold cooked pasta into the cheese sauce. 9: Layer half into the prepared 9x13 dish, topping with half of the remaining grated cheese, then repeat. 10: Bake for 25-30 minutes.
