
Thai Coconut Curry Chicken

What you need

oz coconut milk

lime juice

tbsp paprika

yellow onion
mint leaves

tbsp garlic powder

tbsp onion powder

bunch cilantro

tsp salt

tbsp sesame oil

tbsp ginger
Instructions
1: Dice chicken thighs and put them in a bowl. Coat with sesame oil and honey and then coat with spices. 2: Put sesame oil in a pan and get hot. Saute chicken until almost cooked through (no pink). Set aside. 3: After removing chicken, in the same pan, add garlic, ginger, and onion. Cook until softened. 4: Add gochujang paste and chili garlic paste. Mix and add coconut milk. 5: Add chicken back in and once boiling, reduce to simmer for 5-7 minutes and add cilantro, scallions, mint, and lime juice. 6: Serve with Jasmin rice. 7: Enjoy & buon appetito!View original recipe
