
Spicy Thai Basil Chicken

A quick one-pan spicy Thai basil chicken dish prepared in about 20 minutes. Small cubes of chicken are cooked with vegetables and flavored with a savory sauce, perfect for serving over rice or in lettuce wraps.

What you need

tbsp soy sauce

rice

tsp ground ginger

cup chicken broth

bell pepper

in fresh ginger
tbsp oil

tsp brown sugar
Instructions
1: Whisk together all ingredients under 'for the sauce'. Set aside. 2: In a large pan, heat oil on medium heat. Add chicken and cook until no longer pink (about 4 minutes if small cubes). Add onion, garlic, ginger, chili pepper, bell pepper, and mushrooms. Cook until veggies tenderize a bit (~4 minutes). 3: Add in sauce and cook until it thickens a bit (3-5 minutes). Option to add 1 tbsp cornstarch mixed with 2 tbsp water to help thicken. 4: Add in Thai basil and cook until wilted (2 minutes).
