
Risotto with Mushrooms
This Italian classic Risotto with Mushrooms is a creamy, flavorful weeknight dinner made in one pan. It's hearty and filling, perfect for the whole family. Ready in about 45 minutes, it combines mushrooms, Arborio rice, and Parmesan for a delightful meal.
What you need

shallot

tbsp butter

pepper
cup vegetable broth
cup arborio rice

cup white wine

white onion

Instructions
1: Put olive oil in a deep pan with sides and get hot on medium heat. 2: Add diced onions, shallots and mushrooms with a pinch of salt. Stir and cook until onions are translucent and mushrooms browned. 3: Add 1/2 cup of wine and cook down until almost evaporated. 4: Add rice and another 1/2 cup of wine, cook down until almost evaporated. 5: Put heat on low. Add vegetable broth slowly, one ladle at a time, stirring continuously until creamy. 6: Check rice for al dente texture, add more broth if necessary to finish cooking. 7: Add parmesan-reggiano cheese and butter, mix until melted.
