lb rigatoni pasta

Instructions
1: Boil salted water for pasta. 2: In a large pan, heat olive oil, garlic and red pepper flakes over medium-low heat until garlic softens a bit (~2-3 minutes). 3: Add tomatoes and crush with your hands. Add water from can and salt. 4: Partially cover and bring mixture to a slow, low simmer for 10-12 minutes. 5: While sauce is simmering, cook pasta until al dente (1-2 minutes less than package instructions). 6: When pasta is ready, drain (don’t forget to reserve some pasta water) and add to sauce with about 1/2 cup pasta water to start. Increase heat to medium and stir well. Add more pasta water if needed, 1/4 cup at a time. Cook for 2 minutes. 7: Turn off heat, fold in parsley. Serve with cheese and a drizzle of olive oil.
