
Rigatoni Alla Vodka with Shrimp

What you need
lb shrimp

cup vodka

box rigatoni pasta

tbsp butter

tsp pepper

can tomato paste

bunch asparagus

cup heavy cream

cup olive oil
Instructions
1: Bring water to a roaring boil for pasta to cook in. Add salt to the water (1tbsp). 2: In a deep pan on medium heat, drizzle olive oil. Place shrimp in and cook for 1 minute each side. Remove from pan and set aside. 3: In same pan, add garlic and onions. Cook until the garlic is fragrant (about 1 minute). 4: Add vodka and cook down until almost completely evaporated. Add tomato paste until incorporated and cook down until a little thicker (2-3 minutes). 5: Add asparagus and mushroom and cook until slightly softened (2-3 minutes). Put heat on low, and add heavy cream. Add red pepper flakes, salt, and pepper. Cook down for about 10 minutes, stirring occasionally. 6: Cook pasta until al-dente. 7: Once pasta is done, add pasta and take 1/2 cup pasta water and add it to vodka sauce. Add more pasta water if needed, 1/4 cup at a time. 8: Add butter and cheese and cook until melted. Taste for saltiness, add more if needed.View original recipe
