Instructions
1: Boil salted pasta water. 2: Fry pancetta/prosciutto and peas until crispy (about 10 minutes). 3: While pasta water is boiling and pancetta/prosciutto is frying, start on alfredo sauce. 4: Melt butter over medium heat. Cook onions and minced garlic for about 3 minutes. 5: Add heavy cream and cook until simmering, another 2-3 minutes. 6: Add both cheeses. Put heat on low, and let it cook down (cheese will be fully melted) for about 5-7 minutes. Add a bit of salt (if needed) and pepper to taste. Continually stir. 7: Add pasta to boiling water and cook as directed on box. 8: Add pancetta/prosciutto and peas (with oils) to cooking alfredo sauce and stir in. 9: Add cooked pasta and 1/2 cup pasta water to sauce and toss. 10: Serve with more freshly grated parmesan cheese. 11: Enjoy & buon appetito!View original recipe
