
Orecchiette with Rapini

Instructions
1: In a large pot, bring salted water to a boil on medium-high heat. 2: Once boiling, add rapini and cook for 1 minute. Remove and drain in a colander. Bring water back to a boil. 3: Once boiling again, add pasta and cook until al dente (about 1 minute less than what the package says). Reserve 1 cup of pasta water, and drain when complete. 4: In a large skillet, heat oil over medium heat. Add Italian sausage and brown (about 7-8 minutes). Add onions and cook for 2-3 minutes. Add garlic and cook for another minute more. Add rapini and toss with sausage. Add cooked pasta and toss to combine. Add reserved pasta water as needed (1/4 cup at a time). 5: Finish with salt and pepper and serve with parmesan cheese. Enjoy!View original recipe
