An olive oil cake inspired by the Greek New Years cake, Vasilopita. This moist and flavorful cake is simple to make and not overly sweet. You’ll love the blend of fresh orange juice and zest combined with high-quality extra virgin olive oil.

tsp baking powder

Instructions
1: Preheat oven to 350 degrees. 2: Line a 9-inch cake pan with parchment paper and coat the sides with EVOO. 3: Cream sugar and eggs together with a stand-alone mixer or hand mixer on medium for about 2 minutes. 4: Drizzle in the EVOO and mix for an additional minute. 5: Mix in fresh orange juice and orange zest. 6: In a separate bowl, combine the baking soda, baking powder, and flour (dry ingredients) and add to the wet ingredients in two separate batches, mixing gently to incorporate. 7: Pour the batter into the prepared cake pan and bake for 30 minutes, until it springs back from a poke and the edges are pulled away from the pan. 8: Cool on a wire rack completely before sifting powdered sugar on top to avoid melting. 9: Top with a rosemary sprig and enjoy!View original recipe
