Instructions
1: Fill stock pot 3/4 full with water and place chicken (with skin) in. On medium-high heat, bring it to a boil until chicken is cooked through (165 degrees - about 20 minutes from boiling point). Clean excess chicken foam if needed. 2: Once the chicken is cooked, take out and shred (I love to use a hand mixer). Do not throw away water chicken cooked in. 3: In cooked chicken water, add shredded chicken, celery, carrots, potatoes, onion, bay leaf, chicken bouillon, turmeric, salt, and pepper. Let cook on medium-low until veggies are fork-tender. Once fork tender, add spinach and cook for another 2-3 minutes. 4: Add more bouillon, salt and pepper based on taste, if needed.
