A healthier version of Mexican rice made with gluten-free Jasmin rice and seasoned with olive oil, onion, garlic, tomato paste, and spices. This recipe is easy to prepare and deliciously flavored, perfect as a side dish.

What you need
tsp oregano

tbsp tomato paste

yellow onion
cup chicken broth

lime

tbsp olive oil
tbsp garlic

tsp paprika
Instructions
1: Add olive oil and onions to a pan and cook for 3 minutes until translucent. 2: Add garlic, tomato paste, paprika, and oregano, and sauté for 4 minutes. 3: Add rice and allow it to toast for about 1-2 minutes. 4: Pour in chicken broth and stir. 5: Bring the mixture to a boil, reduce heat to low, and cover. 6: Set timer for 12 minutes. Once that's up, remove from heat (do not open lid). 7: Set another timer for 10 minutes. 8: After 10 minutes, add lime juice and salt (if needed) and fluff with a fork.View original recipe
