These low carb popcorn chicken nuggets are crunchy and packed with flavor, perfect for satisfying nugget cravings without the carbs. Inspired by @low.carb.love, these nuggets are made with chicken tenderloins and a crispy coating of pork rinds and coconut flour. Served with your favorite dips, they are an excellent keto-friendly snack or meal.

pork rinds

tsp paprika

cup coconut flour

avocado oil

tsp garlic powder

tsp onion powder

tsp kosher salt

tsp pepper
Instructions
1: Cut chicken into bite size pieces and set aside. 2: In a small bowl, whisk eggs and set aside. 3: In another bowl, grind pork rinds and mix with paprika, garlic powder, and onion powder; set aside. 4: In the last bowl, mix coconut flour, pepper, and salt. 5: Coat chicken with coconut flour mix until evenly coated. 6: Dip coated chicken in egg wash and then in pork rind mixture. 7: Heat avocado oil in a shallow frying pan. 8: Fry chicken pieces until each side is crispy brown and chicken is cooked through, about 2-3 minutes per side. 9: Set on cooling rack for a few minutes. 10: Dip as desired, using mayo, sriracha, or chipotle Bitchin dip. 11: Enjoy and buon appetito!View original recipe
