Instructions
1: Boil salted pasta water until rumbling. Cook spaghetti until al dente (1-2min less than the box says). Drain and set aside. 2: In a large skillet, heat olive oil over medium heat. Add garlic, sauté until fragrant (2-3min). 3: Add shrimp, cook for 2 minutes (or until shrimp is pink) on each side. 4: Fold in tomatoes, spinach, Parmesan, and drained spaghetti. Cook for an additional minute until combined. 5: Drizzle with lemon juice and toss to coat.
