
Lasagna Soup
Lasagna soup is a hearty and flavorful dish that combines the essentials of lasagna with a comforting soup base. With ground beef, Italian sausage, and a variety of vegetables, this dish is perfect for family meals.
What you need
tbsp italian seasoning
lb ground beef

onion
tbsp fresh parsley

cup spinach
cup mozzarella

tbsp tomato paste

lb italian sausage

cup parmesan cheese

oz ricotta cheese

lasagna noodles

tbsp olive oil
oz marinara sauce
Instructions
1: In a large Dutch oven/stock pot, heat 1tbsp olive oil over medium-high heat. Cook ground beef and Italian sausage until browned. Once browned, remove meat from pot. Drain excess grease from pot. 2: In the cleaned pot, heat 1tbsp olive oil over medium heat. Add onions and cook until a bit softened, about 3 minutes. Add garlic and cook another minute. 3: Stir in tomato paste and allow to cook for 3 minutes before mixing in with onions and garlic. Add marinara sauce, broth, Italian seasoning, and salt. Return cooked meat to pot. 4: Bring to a boil then add uncooked lasagna noodles. Reduce heat to medium-low, stir noodles occasionally and cook until tender (about 10 minutes). 5: Add spinach and stir in. 6: In a bowl, mix ricotta, mozzarella and parmesan cheese. 7: Add soup to bowl and add a dollop of cheese mixture on top.
