Instructions
1: Preheat oven to 425 degrees. Pat dry chicken thighs and season with salt and pepper. 2: In an oven-safe skillet on medium-high heat, heat 1 tbsp butter and 1 tbsp olive oil. Cook chicken thighs (skin side down) and sear each side for about 3 minutes until golden brown. Remove from skillet and set aside. 3: In the same skillet, add onions and potatoes with 1 tsp salt and pepper and cook until golden brown (about 10 minutes). Remove from skillet and set aside. 4: In the same skillet over medium-high heat, melt 2 tbsp butter. Add garlic and ginger and cook for 30 seconds. Add honey, soy sauce, vinegar and bring to a simmer. Reduce heat to low and let simmer for 5 minutes until it thickens a bit. 5: Place chicken thighs and potatoes into the skillet. Drizzle sauce over chicken before placing in oven to bake for about 20-25 minutes or until internal temp is 165. 6: Garnish with parsley and enjoy!View original recipe
