
Ground Turkey Enchilada Skillet

What you need

lb ground turkey

salsa
green bell pepper

yellow onion

tbsp taco seasoning

cup tortilla chips

can black beans

cup corn

tbsp olive oil

jalapeno
Instructions
1: In a skillet/deep pan, heat 2 tablespoons oil on medium heat. Add onions, bell pepper and jalapeƱos. Cook for 3 minutes, or until somewhat softened. 2: Add ground turkey and season with salt. Break apart into small pieces. Cook until browned, about 3-5 minutes. 3: Once turkey is browned, add corn, black beans, taco seasoning and salsa. Cook for 3 minutes. 4: Crumble tortilla chips on top and add shredded cheese. Cover and cook until cheese is melted (about 3 minutes). 5: Serve with tortillas like nachos, over a salad, or with rice.
