
Greek Lemon Potatoes
These Greek lemon potatoes elevate your typical potato dish with vibrant flavors of lemon and herbs, requiring only about 10 minutes of prep time. A combination of Yukon gold potatoes, chicken broth, and spices results in a delicious side that can be enjoyed by everyone.
What you need

tbsp semolina flour

cup fresh lemon juice

tbsp butter
tbsp oregano
cup chicken broth

cup olive oil
Instructions
1: Preheat oven to 400°F. 2: Quarter your potatoes and set aside. 3: In a baking dish, pour chicken broth, lemon juice, oil, oregano, salt and garlic cloves & mix. 4: Place potatoes in dish. Add semolina flour and mix. Try to submerge potatoes in liquid at least 3/4 of the way. 5: Place sliced butter on top of potatoes. Cover with aluminum foil and cook for 45 minutes. 6: Remove foil and cook an additional 25 minutes until most of the liquid is gone and potatoes are fork tender. 7: Put broil on for 3-5 minutes to add a little color and crisp. 8: Add more salt if needed.
