oz bittersweet chocolate

cup granulated sugar

Instructions
1: Preheat the oven to 350 degrees. Grease an 8x8 inch baking pan and line it with parchment paper. 2: Using a stand or hand mixer, beat the eggs, egg yolks, granulated and brown sugars, and salt on medium-high speed until the mixture is light in color and has doubled in volume, about 5-6 minutes. Turn the mixer to low and mix in vanilla until just combined. 3: While the egg mixture is beating, melt chocolate and butter in a saucepan on low heat, stirring continuously until the mixture is smooth. Take the saucepan off heat and whisk in cocoa powder until completely combined. 4: Add the warm chocolate butter mixture to the egg mixture and mix on low speed until combined. Add the flour and use a spatula to gently combine. 5: Pour batter into the prepared pan and bake for 22-27 minutes, until the sides of brownies have set, the top is starting to crackle, and a toothpick placed in the center comes out with crumbles (not wet). 6: Transfer the pan to a wire rack and let cool completely.
