What you need

cup parmesan cheese

oz pancetta
cup pasta water

cup heavy cream

cup asiago cheese

Instructions
1: Boil salted pasta water. 2: Fry pancetta until crispy (about 7 minutes). 3: While pasta water is boiling and pancetta is frying, start on alfredo sauce. 4: Melt butter over medium heat with minced garlic. Cook about 2-3 minutes. 5: Add heavy cream and cook until simmering, another few minutes. 6: Add both cheeses. Put oven on low and let it cook down (cheese will be fully melted). Add a bit of salt and pepper. Continually stir. 7: Add pasta to boiling water and cook as directed on the box. 8: Once pancetta is done, add peas and toss together for a few minutes. 9: Add pancetta and peas (with oils) to cooking alfredo sauce and stir in. 10: Add cooked pasta and 1/4 cup pasta water to sauce and toss. 11: Serve with more freshly grated parmesan cheese. 12: Enjoy & buon appetito!View original recipe
