
Chicken Tortilla Soup
A comforting chicken tortilla soup that is absolutely delicious and takes about 45 minutes to prepare. The soup features a delightful mix of chicken, vegetables, and spices, all simmered together for a flavorful experience.
What you need

can sweet corn

tortilla strips

jalapeno

tbsp chili powder
cheese

tbsp olive oil

tbsp paprika

tsp pepper

cup tortilla chips

can black beans

shallot

tsp cumin

avocado
cup chicken broth

sour cream

carrot

cilantro
Instructions
1: In a Dutch oven or stock pot, heat oil on medium. 2: Add carrots, jalapeños, shallot, onion, and garlic. Cook until softened - about 5 minutes. 3: Add tomatoes, corn, beans, and all seasonings. Add chicken broth. 4: Once boiling, add chicken breast. Put on medium/low, cover, and cook for 15 minutes. 5: Once cooked, remove chicken and shred. Take about 3 cups of the broth and 1.5 cups of tortilla chips. Blend until all smooth. 6: Return shredded chicken and blended mix back to pot. Simmer on low for an additional 10 minutes (uncovered). 7: Serve with toppings. Enjoy!View original recipe
