Instructions
1: In a large pot, add 8 cups of water and the shells of the shrimp. Bring to a boil on medium-high heat. 2: Meanwhile, in a frying pan, add oil and then the tomatoes, garlic, onion, guajillo peppers, and arbor peppers (if using). Add 1 cup of water and bring to a boil on medium-high heat. Cook until vegetables and peppers have softened (about 10-15 minutes). 3: Remove the shrimp shells from the boiling water, then add carrot, celery, potatoes, and zucchinis to the pot and cook on medium heat. 4: Once the tomatoes and peppers are softened, blend everything from the frying pan with the chipotle peppers, salt, oregano, and bouillon powder until smooth. 5: Add the tomato and pepper blend to the vegetable pot and allow to boil on medium-high heat for 10-15 minutes, or until the veggies and potatoes are cooked through. 6: Add shrimp and cilantro and cook for 2-3 minutes. 7: Serve with avocado and tortillas.
