1: In a dutch oven on medium heat, melt butter. 2: Add onions, salt, and pepper, and cook for about 5 minutes until softened. 3: Add garlic and cook for another minute. 4: Sprinkle in flour and whisk, cooking for 2 minutes until it browns a bit. 5: Slowly whisk in heavy cream, milk, and chicken stock/broth, along with broccoli and carrots, and stir. 6: Simmer for 20 minutes on low or until broccoli is fork-tender. 7: Once broccoli is fork-tender, gradually add in cheese and stir until melted. 8: Taste for salt. 9: Top with cheese and croutons.
