1: Preheat oven to 350°F. 2: Make simple syrup by combining ghee, sugar, water, lemon juice, and honey in a saucepan on medium heat. Stir and bring to a boil. Simmer for 10 minutes, then cool completely. 3: Combine walnuts, pistachios, and sugar in a food processor or blender until roughly chopped. 4: Brush ghee on the bottom of a 9x13 baking sheet. Layer about 20 phyllo sheets, spread the nut mixture, and top with remaining phyllo sheets (15-20). 5: Cut baklava into diamond shapes, ensuring to cut through all layers. 6: Pour melted ghee over the baklava and let settle for 5 minutes before baking for about 60 minutes until golden brown. 7: Remove from the oven and pour cooled simple syrup over the baklava.
