What you need

taco shells

taco seasoning

cup white onion

tbsp olive oil

can refried beans
Instructions
1: Preheat oven to 400 degrees. Spray a 9x13 baking dish with Pam. 2: Heat olive oil in a medium frying pan over medium heat. Add onions and cook until fragrant (2-3 mins). 3: Add chicken, taco seasoning, and Rotel tomatoes (don't forget to drain!) until combined. Reduce heat and let cook for 5-7 mins. 4: Put stand and stuff taco shells in the prepared baking dish, standing up. Bake by themselves for 5 mins to allow crisping. 5: Take out of oven and spoon 1 tbsp of beans into each shell's bottom. Warm beans in the microwave for easier spreading. 6: Top with chicken mixture until tacos are stuffed to the top. Sprinkle generously with cheese. 7: Bake for an additional 8-10 mins or until cheese is melted.
