cup chicken broth

tbsp olive oil

tbsp chicken bouillon

cup cilantro
pinch salt

Instructions
1: Rinse and drain the rice. 2: In a deep pan, add oil on medium-high heat. Add a quarter of an onion and a serrano pepper. Allow to cook for about 3 minutes for flavors to mix into the oil. 3: Add the rinsed rice and toast until somewhat golden, stirring occasionally for about 5-7 minutes. 4: While the rice is cooking, blend roma tomatoes, garlic, and a quarter of an onion in a blender. 5: Once the rice is toasted, add the tomato blend and mix it into the rice. Add broth, tomato bouillon, chicken bouillon, cilantro, and a pinch of salt. 6: Bring to a boil. Once boiling, reduce the heat to low, cover with foil, then the lid, and cook for 20 minutes. 7: After 20 minutes, remove the pan from heat and allow it to sit, untouched, for another 10 minutes. 8: Fluff with a fork and enjoy.View original recipe
