A rich and creamy vodka sauce made with pancetta, heavy cream, and a touch of spice. Perfect for coating your favorite pasta. This recipe includes sautéed onions and garlic, along with tomato paste and grated Parmesan cheese for added flavor.

1: Put olive oil in a frying pan and fry pancetta until somewhat crispy (5-6 minutes). 2: In the same pan, sauté garlic and onions in olive oil until garlic is fragrant (2-3 minutes). 3: Pour vodka in and cook until almost all evaporated (1-2 minutes). 4: Add tomato paste and mix. Let it cook to heat for about 2-3 minutes. 5: Add heavy cream, salt, red pepper flakes, and pepper. Cook on low heat for 10 minutes, stirring occasionally. 6: While sauce is cooking, bring water to a boil and cook pasta as directed on the box minus 1 minute for al dente. Don't forget to keep some pasta water! 7: Add cooked pasta to the sauce and mix. 8: Add reserved pasta water, parmesan cheese, basil, and butter, and mix until incorporated. Taste sauce and add more salt or cheese if needed. 9: Let cook for a few more minutes to coat pasta. 10: Top with fresh basil and parmesan cheese. 11: Enjoy & buon appetito!
