A comforting chicken tortilla soup that is absolutely delicious and takes about 45 minutes to prepare. The soup features a delightful mix of chicken, vegetables, and spices, all simmered together for a flavorful experience.

1: In a Dutch oven or stock pot, heat oil on medium. 2: Add carrots, jalapeños, shallot, onion, and garlic. Cook until softened - about 5 minutes. 3: Add tomatoes, corn, beans, and all seasonings. Add chicken broth. 4: Once boiling, add chicken breast. Put on medium/low, cover, and cook for 15 minutes. 5: Once cooked, remove chicken and shred. Take about 3 cups of the broth and 1.5 cups of tortilla chips. Blend until all smooth. 6: Return shredded chicken and blended mix back to pot. Simmer on low for an additional 10 minutes (uncovered). 7: Serve with toppings. Enjoy!
