A delicious and creamy Mac & cheese recipe featuring cavatappi pasta and a blend of cheeses, making it the ultimate Thanksgiving side dish! This dish combines mozzarella, Colby jack, and cheddar cheeses with spices and a rich cream sauce, then baked to perfection for a golden top.

1: Preheat oven to 350 degrees and prepare a 9x13 baking dish. 2: Cook pasta until al dente (1-2 minutes less than what packaging says). 3: Grate all cheese and combine into a bowl. Reserve half of the cheese in a separate bowl. 4: Combine all spices together in a small bowl and divide half of the spice blend into a separate bowl. 5: Melt butter in a large, deep pan on medium heat. Add flour and reserved spice blend. Cook for 1-2 minutes. 6: Add evaporated milk into the roux and whisk until smooth. Slowly add in heavy cream, remaining spice blend, and Dijon mustard. Cook & thicken for 2-3 minutes. 7: Add in half the cheese, handful by handful, until the cheese melts. 8: Fold cooked pasta into the cheese sauce. 9: Layer half into the prepared 9x13 dish, topping with half of the remaining grated cheese, then repeat. 10: Bake for 25-30 minutes. Broil for 1-2 minutes to get an extra golden top.
