Crispy air fryer egg rolls made with ground turkey, vegetables, and wrapped in egg roll wrappers. These egg rolls are just as crunchy as the deep-fried ones, perfect for a delicious and easy dinner.

1: Heat a skillet on medium heat. Add ground turkey and onion and cook until no longer pink. 2: Add the mushrooms, celery, coleslaw mixture, and salt. Cook until vegetables are softened, about 5 mins. 3: Take an egg roll wrapper and add a spoonful of filling to the top corner. Fold the top down over the filling. 4: Roll the wrapper up, tucking the sides in as you go. Moisten the edges of the wrapper with water to seal. 5: Continue rolling the egg rolls until the filling is gone. 6: Spray the egg rolls lightly with cooking spray. 7: Cook the egg rolls at 400F for 6-8 minutes, flipping once.
