1: Cut chicken in half and place in bowl. Add olive oil, Greek yogurt, lemon juice and zest, garlic, salt, pepper, oregano, paprika, cumin, and coriander. Mix well and marinate for 30 minutes or up to overnight. 2: Preheat oven to 350 degrees. Place both onion halves on a baking sheet lined with aluminum foil. Place wooden skewers in onions and layer chicken horizontally on wooden skewers. 3: Bake for about 1 hour 15 minutes or until chicken reaches 165 degrees and is golden. 4: In the meantime, make the sumac salad by combining all ingredients under “-for the sumac salad-” in a bowl. 5: Once chicken is done, cut off skewer vertically. Serve on a pita with tzatziki, sumac salad, and feta.
