1: Dice chicken thighs and put them in a bowl. Coat with sesame oil and honey and then coat with spices. 2: Put sesame oil in a pan and get hot. Saute chicken until almost cooked through (no pink). Set aside. 3: After removing chicken, in the same pan, add garlic, ginger, and onion. Cook until softened. 4: Add gochujang paste and chili garlic paste. Mix and add coconut milk. 5: Add chicken back in and once boiling, reduce to simmer for 5-7 minutes and add cilantro, scallions, mint, and lime juice. 6: Serve with Jasmin rice. 7: Enjoy & buon appetito!
