This is a traditional Mexican Pozole, a hearty stew made of pork and hominy in a rich, flavorful broth. It's versatile with various toppings like lettuce, radishes, cilantro, and cream.

1: Fill a stock pot halfway with salted water and heat. Add pork, garlic, bay leaves, oregano, and salt. Boil for about 1 hour, skimming off fat as it appears. 2: While the meat is cooking, boil the peppers until softened. 3: Blend the boiled peppers with garlic, oregano, bouillon, and chicken broth until smooth. Strain to remove excess skin and seeds. 4: After the pork has boiled for 1 hour, add hominy and onion to the pot, cooking an additional 30-40 minutes.
